Lately, I have been making muffins for my family to enjoy for breakfast. It is a fast alternative to eating prepackaged food. So today I am sharing my favorite recipe for Blueberry Muffins.
Makes 18 muffins.
Heat oven to 375.
Grease 18 muffins cup pan
1/2 cup butter or margarine
1 cup sugar
1 teaspoon vanilla
2 teaspoons baking powder
2 cups flour
1/2 cup milk
2 1/2 fresh or frozen blueberries
In a bowl, mix butter and sugar. Add eggs one a time. Add vanilla, baking powder, and salt and mix. Mix in half of the flour and half of the milk. After it is mixed, then add the remaining flour and milk and continue to beat until fully mixed.
HERE IS A TIP FOR MAKING GREAT BLUEBERRY MUFFINS
Before you put the blueberries in the batter, coat them with flour. It will help them from sinking to the bottom when they cook.
Gently fold the blueberries into the batter and then pour into the muffin cup pan.
1 tablespoon sugar
1/4 teaspoon nutmeg
Mix the topping and sprinkle over each muffin. Bake for 15 to 20 minutes.
